Missing Italy today, so in honor of my friends from Catania I bought some ricotta salata and fresh basil to make one of my favorite dishes, pasta alla norma. This traditional Sicilian pasta is made with tomato, fried eggplant, basil, and salted ricotta grated over top. Don’t let anyone tell you it’s okay to substitute parmesan! Believe me, the trek to Whole Foods is worth it for the ricotta. For some tips on preparation, check out Cooks Illustrated.
